Lavender Meringues and Life Skills With Puppets

One of the best and most unusual cookie recipes presented at Cookie Party were my friend Spoosan's Lavender Meringues. They were eensy little puffs of strong lavender flavor. But in a good way. Lavender can sometimes taste old lady-ish, right? But these cookies were delightful.

Several people at the party were interested in getting the recipe, so Spoosan graciously shared it with me. Give it a shot yourself!

Lavender Meringues

2 egg whites
2/3 cup sugar
some culinary lavender (Note: I'm so sorry I don't have a more precise measurement. I just tossed some in, and then my mother-in-law tossed more in. It was probably close to 2, maybe 3 tbsp?)
about 1/2 tsp of vanilla

Put the sugar and the lavender in a food processor and process until the lavender is completely broken down and integrated into the sugar.

Add sugar, egg whites, and vanilla into a bowl and beat with an electric mixer until the mixture is holds stiff peaks, ideally. My never got quite this stiff, and I ended up just beating it to soft peak stage. I spent about 7 minutes beating it with the mixer.

Pour the mixture into a piping bag with a small tip and pipe the meringue onto parchment paper. Bake in a 270 degree oven for about 20 minutes. The finished meringues should be completely dry on the inside, so you may have to try one to make sure it's not gooey on the inside. I left one batch in for about 30 minutes and the other for 20, so check 'em at twenty min. and go from there.

  1. Those sound MAGICAL. And I was just thinking I want to make meringues. And I tracked down edible lavender at a street fair this summer. And... this will almost make up for not actually getting to go to the cookie party : )

  2. I am intrigued. Maybe not for the holiday party, but possibly Easter. I think this is going to go in the future file for the Easter party.
